Zucchini and Walnut Muffins.

These nutty muffins are quite subtle and not too sweet.

Makes 12 muffins or one loaf.


  • 2 1/4 cups plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon cocoa
  • 1/3 cup margarine
  • 1/4 cup brown sugar
  • 1/2 cup raw sugar
  • 2/3 cup apple sauce
  • 1/4 cup soy milk
  • 3 cups loosely packed grated zucchini (about 2 medium zucchini)
  • 1/2 cup chopped walnuts


Heat the oven to 180C / 350F.

Sift together the dry ingredients in a bowl.

Cream the sugar and margarine together, then mix in the apple sauce and soy milk. Add to the dry ingredients mix until there are no lumps.

Stir in the zucchini and walnuts.

Pour into a greased loaf tin or spoon into a muffin tray. The muffins will take 20 minutes to cook and the loaf an hour or longer. A skewer will come out clean when it is cooked.
