Vegetable Pasta Bake.

This pasta bake, like Shepherds Pie makes a great dinner and even better left overs. It is also quite low in calories – about 300 calories per serve.

Makes six serves.



  • 300 grams macaroni
  • 2 brown onions
  • 1 large head broccoli
  • 400 grams mushrooms
  • 2 carrots
  • 1 zucchini

Sunflower Cheesy Sauce

  • 2/3 cup sunflower seeds
  • 1 carrot roughly chopped
  • 2 tablespoons tahini (sesame paste)
  • 1 tablespoon miso
  • 2 tablespoon soy sauce
  • 2 tablespoons corn flour
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 2 teaspoons dried herbs of your choice (I use thyme, basil and oregano)
  • salt and pepper to taste


Put the pasta onto cook and heat the 190 degrees celsius / 375 degree fahrenheit. When the pasta is ready, drain and set aside.

Finely chop the onion and saute in a large pot with a little oil. Chop the mushrooms and add to the onion, then the chopped broccoli, carrot and zucchini. Cook for five minutes and set aside.

Add all the sauce ingredients to a blender with 1 cup of water and blend on high until smooth. Add another 1 cup of water and mix in.

Add the pasta and sauce to the vegetables and combine well. Pour into a casserole dish and bake for 30 minutes. Serve with salad or steamed vegetables.
