Vegetable Kofta with Spicy Tomato Sauce.

These fried morsels are amazing cooked in a spicy tomato sauce.

Makes 24 kofta, enough to serve 4 to 6.

Ingredients.

Kofta

  • 1 cup grated cauliflower
  • 1 cup grated cabbage
  • 1 carrot grated
  • 1 onion grated
  • 1 1/2 cups chickpea flour
  • 2 teaspoons ground cumin
  • 2 teaspoons garam masala
  • 1 teaspoon salt
  • Oil for frying

Tomato Sauce

  • 2 x 400 gram tins of crushed tomatoes
  • 1 onion
  • 1 inch piece of ginger
  • 2 cloves garlic
  • 1 teaspoon chilli powder

Method.

Make the tomato sauce first. Finely chop the onion, ginger and garlic. Cook them over a medium heat with a little oil in a saucepan. After a few minutes add the chilli and tomatoes. Leave to simmer while you make the kofta.

Heat about 2 inches of oil in a saucepan.

Combine all the kofta ingredients together in a bowl to form a dough. Form the dough into 24 balls.

Cook the kofta in batches in the hot oil. The oil should be hot enough that a small piece of dough bubbles rapidly after being dropped in. Cook the kofta for 3 to 5 minutes until they are dark brown in colour. Drain and set aside.

Add the kofta to the tomato sauce and leave to simmer for at least 10 minutes. Serve with rice.
