Thai Vermicelli Noodle Salad.

This delicious noodle salad is a great work lunch staple, all you need to put it together is a bowl, a knife and a jar.

Makes one serve.

Ingredients.

Salad

  • A ball of rice noodles
  • 1 spring onion finely chopped
  • 1 tablespoon of pepitas or sunflower seeds or sesame seeds
  • 10 cashew nuts
  • A square of marinated tofu cut in slices
  • Salad ingredients like; cherry tomatoes, grated carrot, green beans, snow peas

Dressing

  • 1 tablespoon of peanut oil
  • 1 teaspoon of sesame oil
  • 2 teaspoons of soy sauce
  • 1 teaspoon rice wine vinegar
  • 1 wedge of lime juice

Method.

Put the noodles in a bowl and cover with boiling water. After a minute add any salad ingredients that need cooking like green beans.

Put all the sauce ingredients in a jar and shake well.

Drain the noodles when they are tender and wash with cold water.

Add all the salad ingredients and the sauce in your bowl and toss together.
