Thai Satay Sauce.

Make this tasty satay sauce in the time it takes for your rice or noodles to cook.
Makes two serves.
Ingredients.
- 3/4 cup roast peanuts
- 3/4 cup coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 teaspoons minced ginger
- 1 garlic clove
- 2 teaspoons sugar
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1/2 teaspoon chilli flakes
Method.
In a food processor blend all the ingredients until they combine into a smooth sauce. It can be heated in a saucepan or served as is.
Serve with vegetables and rice or noodles.
