Thai Fried Rice.

This is a version of the fried riceĀ I had every day for lunch while in Thailand, it is great for lunch or dinner.

Makes two serves.

Ingredients.

  • 1 spring onion
  • 1 hot thai chilli
  • 1 clove of garlic
  • 2 cups of mixed finely chopped vegetables such as carrots, mushrooms, peas, beans, brocolli and cauliflower.
  • 2 cups of cold boiled rice (preferbly from yesterday, even better yesterday's leftover takeout rice)
  • 1 teaspoon of dark soy sauce
  • 1/2 teaspoon of white sugar
  • 1/2 teaspoon of rice wine vinegar
  • Finely ground pepper
  • Oil to cook

Method.

Stir fry the vegetables in hot wok or fry pan with a little oil until almost cooked. Set aside.

Chop the spring onion, garlic and chilli. Add to the hot pan with a little oil. After half a minute add the rice and coat well with the onion, garlic and chilli.

Pour over the sauce and mix into the rice until the color is even. Add the vegetables to the rice and heat through.

You can serve with a squeeze of lime and some chopped tomato or cucumberĀ or just straight up.
