Tex Mex Beans.

Serve these tasty beans with roast potato or tortilla’s or corn chips with guacamole and tomato salsa.

Makes three cups of beans.

Ingredients.

  • 1 cup of black beans (preferably soaked overnight)
  • 1 finely chopped onion
  • 2 cloves of garlic minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon chipotle chile (or regular powdered chile if you don't have it)
  • Salt
  • 1/2 tin of tomato puréed

Method.

In a saucepan or pressure cooker put the beans on to boil. They will take 40 to 60 minutes depending on if they have been soaked or not.

Sauté the onions in oil on a high heat in a fry pan. When they are browned add the garlic and spices with a little extra oil. After a minute add the tomato.

Simmer until the beans are cooked. Drain the beans and add to the tomato mix. Add a little extra water if necessary. Season with salt to taste.

Roughly mash the beans to thicken the sauce.
