This salad is delicious by itself or in a sandwich, but most especially in a falafel roll.

Makes a medium sized bowl of salad.


  • 1/4 cup dry bulger wheat soaked for an hour
  • 1 cup chopped fresh parsley leaves
  • 1 large tomato
  • 1/4 red onion
  • Juice of 1/2 lemon
  • Olive oil
  • Pepper


Drain the wheat well. Roughly chop the tomato and finely chop the onion. combine the wheat, parsley, tomato, onion and lemon juice in a bowl.

Season with olive oil and pepper to taste.
