Sweet Potato and Lentil Soup.

This thick soup is quick and easy to make and delicious in winter.

Makes 4 dinner sized serves.


  • 1 small onion finely chopped
  • 1 sweet potato (about 450 grams / 1 pound)
  • 1 cup red lentils
  • 6 cups stock
  • Olive oil


Heat a little oil in large saucepan, add the onion and cook over medium heat for about 2 minutes or until onion is soft.

Add remaining ingredients, bring to the boil, reduce heat, cover, simmer for about 20 minutes or until sweet potato is soft.

Use a stick blender to blend until smooth. Season with salt and pepper and serve with crusty bread.
