Spinach and Chickpea Curry.

Spinach and chickpeas is great served with chapati, you can roll them up and eat them like burrito’s.

Makes four serves.

Ingredients.

  • 2 tablespoons vegetable oil
  • 2 onions finely chopped
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried chili pepper flakes, crushed
  • 1/2 teaspoon turmeric
  • 1 tin of crushed tomatoes tomatoes
  • 3 cups of cooked chickpeas
  • 1 bunch of spinach finely chopped (about 4 cups)
  • juice of 1/2 a lemon

Method.

Heat the oil and sauté the onions for until golden. Add the spices,  cook for 2 minutes until the spices are fragrant.

Add the tomatoes and chickpeas and simmer for 25 minutes.

Stir in the spinach and lemon juice.

Serve when the spinach is cooked.
