Salt and pepper tofu is a great entree to any asian meal and impressive to serve to dinner guests.
Makes enough for four as an entree.
The secret to good salt and pepper tofu is ensuring the tofu is well drained of any excess liquid. To do this you can wrap the tofu well in absorbant paper and gently press it for a few hours or overnight.
The quicker method is to prepare the tofu into 1 inch cubes, and place them on a plate lined with absorbant paper. Microwave the tofu on a medium heat for 1 minute. Pat any excess liquid off and then microwave again. Pat the tofu completely dry and then set aside.
Pour two inches of oil to heat in a saucepan.
Combine the flour, salt and pepper in a bowl. Gently toss the tofu in the flour until well coated.
When the oil is very hot, drop in the tofu and fry until the tofu is lightly brown. Drain and serve.
