This french potato dish is delicious is great any time, with traditional french dishes, at bbq’s or potluck dinners.
Makes enough for four.
Heat the oven to 190 degrees celsius / 375 degree fahrenheit.
Slice the potatoes very thinly (a few millimeters thick) using a mandolin if you have one. Slice the onions even more thinly.
Heat the stock, soy milk and 1 tablespoon of the margarine together.
In an oven proof dish arrange a layer of potatoes, then sprinkle some onion, salt and ground pepper. Repeat until all the potato is used. Use the remaining margarine to put small dollops on top of the potatoes.
Bake the potatoes for 40 to 50 minutes in the oven, until they are tender and golden on top.
