Pico de Gallo (Salsa Mexicana).

This fresh condiment is made for almost every mexican dish and the key is finding ripe and flavoursome tomatoes.

Makes two cups.


  • 4 medium tomatoes
  • 1 green chilli (optional)
  • 1/4 red spanish onion
  • 1/4 lemon
  • 1 tablespoon olive oil
  • Salt and pepper


Roughly chop the tomato and finely chop the chilli and onion. Mix them together in a bowl with the olive oil and the juice of the lemon.

Season with salt and pepper.
