Pasta with Sun-dried Tomatoes, Lettuce and Peas.

This simple pasta is incredibly flavoursome and can be made in 20 minutes using a single pot.

Makes two serves.

Ingredients.

  • 1/3 packet of pasta (about 170 grams)
  • 1 garlic clove
  • 8 sun-dried tomatoes
  • 1 cup peas (fresh or frozen)
  • 1/4 head of lettuce (pick one that isn't bitter and has a good amount of crunch)
  • 2 tablespoons of white wine vinegar (or 1/4 cup white wine)
  • Oil
  • Salt and pepper

Method.

Put the pasta on to cook.

Slice the sun-dried tomatoes into lengths, finely chop the garlic, slice up the lettuce. You should end up with about 3-4 cups of lettuce.

When the pasta is cooked, drain and set aside.

Add a little oil and the garlic to the pan on a medium heat. When it starts to sizzle add the sun-dried tomatoes and peas. When the peas are just about cooked add the lettuce and saute for about 30 seconds.

Add the pasta and white vinegar and stir through. Season with salt and pepper and serve.
