Pasta with Pink Sauce.

The cashews blended with the tomatoes into a delicious creamy pasta sauce that goes well with many extras like mushrooms, spinach, sweet potato and avocado.

Makes two serves.


  • 1 onion finely chopped
  • 1 clove of garlic finely chopped
  • 3 chopped tomatoes or a half a tin of crushed tomatoes
  • 1 tablespoon of tomato paste
  • 1/3 cup of cashews
  • 1/3 packet of pasta
  • Optional additions sliced mushrooms, spinach, avocado, sweet potato


Put the pasta on to cook.

In a fry pan add a little oil and the onions and sauté until soft. While the onions are frying blend the tomato, tomato paste and cashews to the food processor until smooth.

When the onions are soft turn the heat down and add the garlic and cook for another minute. If you want a super smooth sauce add the the onion mixture to the tomatoes in the blender and blend again.

If you are having mushrooms or sweet potato cook these up now.

When the pasta is ready, drain and add to the fry pan, mix the sauce through with any additions and serve.
