This simple flat bread is quick to make and is especially good to scoop up dal with.
Makes four paratha.
In a bowl combine the flour and salt. Add the warm water and knead into a soft dough. If required add another teaspoon or two of water.
Wrap the dough in cling wrap and leave to rest for ten minutes.
Roll out the dough into a 6 inch square. Roll it up into a cylinder and then cut it into four equal rounds. Take one of the rounds and squash it flat with your hand and then using a rolling pin, roll it out into a six inch circle. Repeat for the other three pieces of dough.
Heat a fry pan to a medium heat. Add a teaspoon of margarine to the pan and then add one of the parathas. Wait until large bubbles form in the dough and then gently press the bubbles with a spatula to push the air through the paratha. Brush the top of the paratha with more margarine, flip it over and cook for another minute.
Repeat with the other parathas.
