Pancakes are incredibly easy to make and are popular with everyone for breakfast or brunch.
Makes eight pancakes.
Mix the dry ingredients together. Whisk in the wet ingredients making sure there are no lumps.
In a medium hot fry pan add a little margarine (about 1/4 of a teaspoon) for greasing, then add about a 1/4 cup of batter. When bubbles appear in the centre of the pancake flip it over and cook the other side for about 20 seconds.
Don’t worry if the first pancake sticks, the next ones will be fine when the pan is tempered.
Squeeze lemon and sprinkle raw sugar on the pancake. Roll and serve.
