Orange and Walnut Baked Apples.

These baked apples make a delicious winter dessert served with vanilla ice cream.

Makes 4 baked apples.

Ingredients.

  • 4 apples (like Braeburn or Granny Smiths)
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup brandy
  • 2 tablespoons brown sugar
  • 1/4 cup currants (optional)
  • 1/2 cup walnuts

Method.

Heat the oven to 160C / 320F.

Combine the orange juice, zest, brandy, brown sugar and currants in a saucepan and simmer until the brown sugar is dissolved.

Core the apples and cut into thin slices lengthways. Dip each apple slice into the orange and brandy mixture and reassemble the apples back together.

FInely chop the walnuts and mix together with the remaining orange and brandy mixture. Stuff the mixture inside the cored apple hole. Put the apples on a tray and pour any remaining liquid over the top.

Bake in the over for 40 minutes or until the are soft. Serve hot or cold.
