Onion Bhaji.

Serve these delicious fried onion morsels with your favourite indian chutney.

Makes six bhaji.

Ingredients.

  • 1 large brown onion
  • 3 tablespoons chickpea flour (sometimes called gram or besan flour, you can get this from Asian or Indian grocery stores)
  • 2 teaspoons garam masala or 1 teaspoon each of ground cumin and coriander seed
  • Oil for frying

Method.

Pour about 1cm or 1/3 inch of oil into a fry pan and turn up to a medium heat.

Halve and finely slice the onion. Mix the onion together in a bowl with the flour and spice. Add 2 to 3 tablespoons of water until the mixture is sticky enough to hold together.

Test the oil heat by dropping a piece of onion in, if it is ready the onion will immediately start to bubble.

Squash desert spoon amounts of the mixture into flat discs and slide into the oil. Cook each side for about 1 minute until browned. Drain on absorbent paper and serve.
