Olive Tapenade Pasta with Cherry Tomatoes.

This one pot pasta dish is not only faster than getting home delivery, it tastes better too.

Makes two serves.


  • 1 cup of pitted olives
  • 1 cup of chopped flat leaf parsley
  • Juice of 1 lemon
  • 1/3 packet of pasta
  • 1 punnet of cherry tomatoes halved
  • 1/2 cup of toasted pine nuts


Put the pasta on to cook.

In a food processor blend the olive, parsley and lemon juice till smooth.

Drain the pasta, reserving 1/2 a cup of liquid.

Toast the pine nuts in the pan until golden.

Add the pasta and tapenade back to the pot and stir in with the cherry tomatoes and serve.
