Nut Loaf.

Nut loaf makes an excellent christmas dinner and is delicious with mushroom gravy.

Makes four serves.


  • 1 onion chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic finely chopped
  • 3 cups of mushrooms sliced
  • 1 tablespoon of flour
  • 1 1/4 cups of┬ávegetable stock
  • 1 1/2 cups of finely chopped mixed nuts (cashews, sunflower seeds, walnuts, brazil nuts, hazelnuts, pistachio)
  • 3 cups breadcrumbs
  • 1 tablespoon soy sauce
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • Serve with mushroom gravy


In a hot saucepan add the onion and olive oil. Saute until the onion is soft. Add the garlic and mushrooms. Cook for a few minutes.

Add the flour and mix well. Add the stock and leave to simmer for 5 minutes.

Remove from the heat and add the remain ingredients. Combine.

Grease a loaf pan and press in the mixture ensuring there are no air bubbles.

Cook in a hot oven (190 C / 390 F) for 30-40 minutes.
