This incredibly simple dish is a great start to any day.
Makes two serves.
Heat the a tablespoon of olive oil and a tablespoon of margerine in a saucepan. Once it is hot add the mushrooms.
Put the toast on to cook.
When the mushrooms are almost cooked add balsamic vinegar to taste and stacks of pepper.
Butter the toast, put the avocado on top, then the rocket and then spoon on the mushrooms. Eat over the sink to save on washing up.
