Mushroom, Olive and Almond Burgers.

These delicious burgers not only have great flavour, they also hold together really well on the BBQ.

Makes six burgers.


  • 2 cups mushrooms (about 200 grams)
  • 2 slices sandwich bread
  • 1/2 cup almond pulp (leftover from making almond milk) or 1/2 cup almond meal
  • 1/2 cup whole almonds
  • Handful parsley leaves
  • 1 tablespoon olive oil
  • 1/3 cup olives
  • Pinch chilli flakes
  • Salt
  • Pepper


Put all the ingredients in the food processor and blend until fairly smooth. Shape into 6 equal burger patties.

Cook the burgers with a little oil over a high heat until browned on both sides. Serve on a bun with lettuce, tomato and tomato sauce.
