The caramalised onions make this simple dish wonderfully addictive, one serve is never enough.
Makes about 4 cups
Add the brown rice to a large saucepan of boiling water. Boil for 15 minutes and then add the lentils to the saucepan. They will take another 30 minutes or so to cook until tender.
While the rice and lentils are boilings cut the onions into very thin rings. Add a tablespoon of the olive oil to a frypan. Add the onions and cook over a low heat for 20 minutes until they are brown.
When the rice and lentils are cooked drain well. Then add them to the frypan with the onions and the remaining tablespoon of oil. Cook over a medium heat for 2 minutes, season with salt and serve.
