This is an excellent everyday breakfast, the plums keep in the freezer for months and really make the meal even if they do turn your milk purple.
Makes eight serves.
Cut the plums in half and remove the stones. Place in a small saucepan with the sugar and a quarter cup of water. Simmer over a low heat for an hour.
Turn the oven on to a high heat. Mix the oats and maple syrup together in a large bowl. Transfer the oats to a baking tray and place the tray in to oven.
After 5 minutes sprinkle the shredded coconut on top of the oven. Bake for another 5 minutes.
Remove from the oven and leave to cool. Combine all the remaining muesli ingredients together. Store in an airtight container.
Blend the cooled plums until smooth. The plums can be stored in the fridge or freezer.
