Mole Verde (Green Mole).

This fresh green mole looks and tastes amazing. It can be used as a condiment or a dip.

Makes a cup and a half of mole.


  • 1/2 cup pumpkin seeds (pepitas)
  • 2 tablespoons sesame seeds
  • 1/4 teaspoon cinnamon
  • 2 teaspoons cumin seed
  • 2 teaspoon ground coriander
  • 1 small onion
  • 1 small green chilli
  • 4 cos (romaine) lettuce leaves
  • 1/2 cup coriander leaf
  • 1 cup stock
  • Olive oil
  • Salt


In a frypan dry fry the pumpkin seeds, sesame seeds and the spices over a medium heat until the sesame seeds start to brown. Set aside.

Finely chop the onion and chilli. Add a little olive oil to the frypan and saute the onion until it is soft.

Blend the spice mix, onion and chilli and the remaining ingredients together until smooth. Season with salt.
