Spicy chai tea is great served hot any time or cold straight out of the fridge.
Makes 2 litres.
Pound all the spices in a mortar and pestle to crack the cinnamon sticks, cardamon pods and pepper corns.
Add a litre of water, the spices and tea to a large saucepan. Bring to the boil, then add the soy milk and sugar. Simmer for five minutes and serve.
