Mexican Rice.

This is a simple and light version of mexican rice, it is great as a burrito filler and as a side dish.

Makes two cups.

Ingredients.

  • 2 cups of cooked rice
  • 1/2 teaspoon oil
  • 1/2 bunch of coriander (cilantro) leaves
  • 1/2 teaspoon vegetable salt (or plain salt)
  • 2 tablespoons lime juice

Method.

Chop the coriander.

In a hot frypan add the oil and rice and saute for half a minute. Remove from the heat and add the remaining ingredients.

Adjust the seasonings to taste. Serve warm.
