Lemon Curd.

Lemon curd is a delicious alternative to jams and is a traditional english condiment.


  • 1 cup non-dairy milk
  • 1/4 cup sugar
  • 1/3 cup lemon juice
  • 1/2 teaspoon agar powder
  • 3 tablespoons corn flour
  • 1 to 2 drops of yellow colouring (optional)
  • 2 tablespoons apple sauce
  • 1 tablespoon dairy free margarine


Combine all the ingredients in a saucepan and stir constantly over a medium heat until very thick.

Store in a jar as a spread for scones, bread or use as a tart or cake filling.

Note: the amount of sugar is to make a quite tart curd, add more sugar if you prefer it sweeter.
