Kobbari Annam (Coconut Rice).

This side goes well with a wide range of Indian dishes as well as Thai curries.

Makes enough serve to four.


  • 3 cups cooked long grain rice (1 cup uncooked)
  • 2 teaspoons mustard seeds
  • 1 inch piece ginger finely grated
  • 1 teaspoon ground cardamon
  • 1 tablespoon finely cut green chilli
  • 1/3 cup roast cashews
  • 2/3 cup fresh or dried grated coconut
  • Salt
  • Oil


If you are using dried coconut, then add a few tablespoons of water to it to soften it.

Add a little oil to a very hot fry pan, then add the mustard seeds. When they start to pop add the ginger, cardamon, chilli and cashews. After a minute add the coconut and rice. Cook for two minutes and then serve.
