This side goes well with a wide range of Indian dishes as well as Thai curries.

If you are using dried coconut, then add a few tablespoons of water to it to soften it.
Add a little oil to a very hot fry pan, then add the mustard seeds. When they start to pop add the ginger, cardamon, chilli and cashews. After a minute add the coconut and rice. Cook for two minutes and then serve.
