Hokkien Noodle Salad.

This simple salad makes a tasty and quick lunch.

Makes enough for two.

Ingredients.

Stir fry

  • 2 serves of hokkien noodles
  • 1 carrot
  • 1/2 head brocolli
  • 1 bok choy
  • 2 squares of marinated tofu
  • 1 tablespoon sesame seeds

Dressing

  • 1 tablespoon tahini
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon chilli oil

Method.

Prepare the hokkien noodles according to the packet instructions and set aside.

Chop the vegetables and tofu into small pieces.

Whisk the dressing ingredients together.

In a fry pan saute the vegetables in a little oil until they are just cooked.

Combine everything together in a bowl and serve!
