Harissa.

This spicy african spread is great for burgers, corn fritters, baked bean jaffles and pretty much and other savoury snack.

Makes about 1/2 a cup of harissa.

Ingredients.

  • 5 inches of long red chilli (the reasonably mild kind)
  • 2 inches of long green chilli (the reasonably mild kind)
  • 1 tablespoon coriander seed
  • 2 teaspoons cumin seed
  • 1 teaspoon whole pepper
  • 1 teaspoon salt
  • 1/2 teaspoon ground pimento
  • 1 cup of parsley leaf and stalk
  • 1/2 cup of oil

Method.

If you are using whole spices roast them gently in the pan for a minute until they are fragrant. Then grind them using a mortar and pestle or spice blender.

Combine all of the ingredients in a food processor and pulse into a smooth spread.
