Guacamole needs no introduction, with hummus it is the other incredibly versatile spread and universally popular dip.

Makes one cup.


  • 1 avocado
  • 1/4 cup of coriander leaves
  • 1 spring onion
  • 1/2 a lime
  • Salt and pepper


Finely chop the coriander and spring onion. In a bowl mash the avocado roughly together with the coriander, spring onion and the juice of the lime. If you like your guacamole smooth whip the mixture with a fork for a minute until the avocado becomes shiny.

Season with salt and pepper to taste.
