These are super tasty burrito’s, you can use tofu instead of potato with the green mole for a more of a protein hit.
Makes four burritos.
Cut the potatoes into small half inch cubes and boil in a saucepan for 20 minutes or until cooked. Drain the potatoes and set aside.
Prepare the mole sauce, guacamole and pico de galo.
Return the potatoes to the saucepan with the mole and heat through.
Place a quarter of the potato mix, guacamole and pico de galo along the middle of each tortilla. Roll up and serve.
