Golden Falafels.

My favourite Lebanese restaurant in Sydney, Fatima’s makes delicious golden falafel, this is my version.

Makes 16 small falafels.

Ingredients.

  • 1/2 cup chickpeas soaked overnight
  • 1/2 cup spilt fava beans  soaked overnight
  • 1 small onion
  • 1 clove garlic
  • 1 teaspoon salt
  • 2 teaspoons coriander
  • 2 teaspoons cumin
  • 1 teaspoon black pepper
  • 1/2 cup bread crumbs
  • 1/4 - 1/2 cup flour
  • 1 teaspoon baking soda
  • Oil for frying

Method.

In a food processor pulse the drained chickpea and fava beans until they resemble a fine breadcrumb. Remove to a mixing bowl.

Add the onion and garlic to the food processor and blend into a smooth paste. Add to the bean mix.

Stir in the remaining ingredients. Add the extra flour if required, the mixture should be a reasonable firm dough.

Heat two inches of oil in a small saucepan to a medium heat. When it is hot enough a small amount of mixture should immediately bubble and rise to the surface when dropped in.

Cook the falafel until golden brown and drain on absorbent paper. Serve with hummus, tabbouleh and lebanese bread.
