These delicious soft and chewy sweet ginger biscuits are super easy to make and get better as the days go by (although probably not longer than a week!)

Makes 16 medium biscuits.

Ingredients.

  • 1/3 cup dairy free margarine
  • 1/3 cup brown sugar
  • 1/3 cup golden syrup
  • 1 1/2 teaspoon dried ginger powder
  • 1/4 teaspoon bicarbonate soda
  • 1 1/4 cups all purpose plain flour

Method.

Heat the oven to 180C / 350F.

In a saucepan melt together the margarine, golden syrup and brown sugar. Stir in the ginger powder. Add a drop of water to the bicarbonate and make into a paste and add to the saucepan. Mix well.

Stir in the flour. Make small dessert spoon sized balls of the dough and place on a tray at least an inch apart (they will spread a little). Press each ball down with a fork.

Bake for 16 minutes. Cool them and eat!
