Fresh stretchy tortillas really bring together a great mexican dish. Making them yourself is simple and well worth the effort.
Makes eight medium (8 inch) tortillas
In a bowl mix together the flour, baking powder and salt. Rub in the margarine with your fingers until there are no lumps left.
Combine the soy milk and water and heat until it is warm (about 20 seconds in the microwave). Mix into the bowl with the flour.
Knead the dough for a couple of turns until it is held together, don’t worry if it seems a bit too wet. Leave it to rest for at least 10 minutes but preferably longer.
Cut the dough into 8. Put a large frypan onto a medium heat and roll out the first ball until it is about 8 inches wide. Use flour to stop the tortilla sticking to your rolling pin and bench.
Cook on both sides for about a minute (the raised parts of the tortilla should be lightly brown. Remove from the pan and cover with a tea towel.
Repeat for the 7 remaining tortillas.
