Cornbread is simple to make and an excellent accompaniment to soups and stews.

Makes one Loaf


  • 1 cup soy milk
  • 1 teaspoon vinegar
  • 1/4 cup oil
  • 1 cup flour
  • 1 cup cornmeal (polenta)
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 cup sun dried tomatoes
  • 1 sprig rosemary


Mix together the soy milk and vinegar in a bowl.

Turn oven on to 200 C /400 F. Place cast iron griddle in the oven.

Finely chop the sun-dried tomatoes and rosemary sprigs.

Add the remaining ingredients in with the soy milk and vinegar and mix well.

Remove the griddle from the oven and grease it with a little olive oil and cornmeal. Pour in the batter, return to the oven and bake for 25 minutes.
