Coconut Macaroons.

These sweet and chewy coconut biscuits are deliciously light and incredibly moorish.

Makes 20 macaroons


  • 1/2 cup apple sauce
  • 2/3 cup sugar
  • 2/3 cup self raising flour
  • 2 tablespoons canola or other light oil
  • 3 cups shredded coconut
  • 2 teaspoons vanilla


Heat oven to 180C / 350F.

Combine all the ingredients together. Place spoonfuls on a greased baking tray.

Bake for 20 minutes until lightly browned. Cool for 20 minutes before eating if you can, otherwise they are going to be rather crumbly.
