Pear butter is amazing on ice cream, as a spread on toast or just eating it out of the jar. You can substitute apples for pears.
Makes about 3 cups
Peel and cut the pears into small 1/2 inch cubes. Add the pears, lemon juice and water to saucepan. Bring to the boil and then lower to a simmer for about 25 minutes, until the pears are soft. Remove enough liquid from the pears so that the liquid sits about an inch below the top of the pears. Anywhere from 1/2 to 2 cups will be removed depending on how juicy the pears were. This surplus pear juice makes a great sweetner in smoothies.
Put the pear mixture in a blender and pulse until smooth. Return to the saucepan and leave to simmer for about 2 hours, until the pear mixture will stay heaped on the back of a spoon.
Ladle into a warm sterile jar and seal.
