Mmmmm – tasty sweet and sticky cinnamon buns, these are well worth the effort.

Makes nine buns

Ingredients.

Dough

  • 1 teaspoon yeast (about 1/2 a sachet)
  • 1 teaspoon sugar
  • 1/4 cup warm water
  • 1/2 cup soy milk
  • 1/4 cup sugar
  • 1/3 cup dairy free margarine
  • 2 1/2 cups plain (all purpose flour)
  • 1/4 teaspoon of salt

Cinnamon syrup

  • 2 tablespoons dairy free margarine
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Method.

Combine the teaspoon of sugar and yeast with the warm water in a glass.

Heat the soy milk until almost boiling, remove from the heat and stir in the margarine until it is melted.

In a large bowl combine the flour, salt, all spice and cinnamon. When the yeast mixture has a head of froth add to the flour with the soy milk and margarine.

Mix and then turn out onto a well floured bench. Knead the dough for a minute or two then return to the bowl. Cover the bowl and leave to rise for an hour and half or until the dough has doubled in size in a warm place.

Take the dough and knead it again for a few minutes, then roll it out into long (about a foot and half) rectangle.

Melt the two tablespoons of margarine and brush onto the dough. Sprinkle over the brown sugar and cinnamon, then roll up the dough like a sponge roll. Cut the roll into 9 equal rounds.

Place the buns into a square baking tin about an inch apart.

Leave to rise for 45 minutes.

Preheat the oven to 200C / 390F.

Bake in the oven for 20 minutes. Turn upsitde down onto a plate and eat warm!
