This delicious christmas fruit and nut cake is a simplified take on the traditional version and can be ready in an hour.
Makes one loaf - about 10 slices.
Heat the oven to 170C.
Roughly chop the pecans and walnuts. Halve the apricots and dates.
Mix together the flour, sugar and apple puree. Add all the remaining ingredients to the batter. Press the mixture firmly into into a well greased loaf tin. Bake for 35 to 40 minutes.
