Chinese Snow Pea and Cashew Nut Stir Fry.

This stir fry is quick and easy to make and has that tasty chinese take away flavour.

Makes enough for two.

Ingredients.

Sauce

  • 1 teaspoon soy sauce
  • 1 cup vegetable stock
  • 2 tablespoons mushroom sauce
  • 1 teaspoon cornflour

Stir fry

  • 2 tablespoons finely chopped garlic
  • 2 1/2 inch slices of tofu (about 150 grams)
  • 1/2 cup roasted cashews
  • Large handful of snow peas
  • 2 tablespoons of canola oil
  • Enough mixed vegetables for two, like carrot, cauliflower, broccoli, zuchinni
  • Enough rice for two (about 2/3 cup)

Method.

Put the rice on to cook. Combine the sauce ingredients together. Cube the tofu and prepare the vegetables.

In a very hot wok add the oil and garlic, then fry for about 30 seconds until the garlic starts to brown. Add the tofu and any hard vegetables (such as carrot and cauliflower), stir fry for a minute then add the sauce, the remaining vegetables and cashews. Cook for another minute. Serve with rice.
