Chewy Currant and Oat Cookies.

These delicious cookies are based on the basic cookie recipe.

Makes about 40 cookies.

Ingredients.

  • 1/4 cup dairy free margarine
  • 1/4 cup coconut oil (or if you don't have any, another 1/4 cup margarine)
  • 3/4 cup brown sugar (or any tasty dark sugar)
  • 1/3 cup agave syrup
  • 1 tablespoon ground linseed (+ 3 Tbsp water)
  • 1 teaspoon vanilla extract
  • 1/3 cup almond meal
  • 1/2 cup desiccated coconut
  • 3/4 cup self raising wholemeal flour (or plain all purpose wholemeal flour with 1 1/2 teaspoons baking powder)
  • 1/2 cup self raising flour (or plain all purpose flour with 1 1/2 teaspoons baking powder)
  • a pinch of salt
  • 3/4 cup oats
  • 1/4 cup currants
  • 1/4 cup raisins

Method.

Heat the oven to 160C / 350F.

Mix together the ground linseed with 3 tablespoons of water and set aside.

Cream together the margarine and the sugar for a few minutes using an electric beater or a whisk. Add in the linseed mixture & continue beating till combined. Add vanilla, flours, almond meal & salt, mix to combine.

Stir in all the remaining ingredients.

Make teaspoon sized balls of dough and place on a baking tray 1 inch apart as they will spread.

Bake for 15 minutes or until the cookie bounces back when pressed lightly. Remove from the oven and leave on the tray for 5 minutes before removing to cool on a rack and then eat your tasty reward!
