Chewy chocolate and macadamia cookies.

These cookies are ridiculously easy to make, they take a mere 25 minutes from start to finish (although if you don’t wait for them to cool you will burn your tongue).

Makes 18 cookies.


  • 2/3 cup sugar
  • 1/2 cup margarine
  • 1/2 cup soy milk
  • 1 teaspoon vanilla essence
  • 2 cups plain flour
  • 2 teaspoon baking powder
  • Pinch of salt
  • 2/3 cup chopped chocolate
  • 2/3 cup chopped macadamia nuts


Heat the oven to 180C / 350F.

Cream together the sugar, margarine, soy milk and vanilla essence in a bowl. Sift in the flour, baking powder and salt. Add the chocolate and macadamia nuts. Mix well.

Spoon onto a baking tray to make 18 cookies. The hold their shape quite well, so you can squash them out if you like your cookies flat.

Bake in the oven for 14 minutes. Cool and then eat!
