Champ is a simple Irish dish that can be eaten as a side or with some baked tofu mixed in eaten as a main.
Makes four side dish serves.
Boil the potato until tender, drain and set aside.
Melt the butter in the pot. Add the spring onion and fry for a minute, then add the milk, turn the heat down low and leave to simmer for 2 minutes.
Add the potato to the pot, mash well, then whip with a fork. Season to taste with salt and pepper.
Traditionally it is served with another tablespoon of margarine buried in the mash, but I usually give this a miss.
