Cashew Pesto Dip.

This dip also makes a good sandwich spread as well as them more traditional pasta sauce.
Makes one cup.
Ingredients.
- 2 tightly packed cups of basil leaves
- 1/2 cup sun-dried tomatoes
- 1/2 cup roasted cashew nuts
- 1 tablespoon of oil (omit this if your sun-dried tomatoes are in oil)
- 1 teaspoon sea salt
Method.
Put all the ingredients in a food processor and process until you desired level of smoothness. Serve with crackers and olives.
