Bruschetta.

This classic italian dish of garlic rubbed bread and tomatoes is delicious any time.

Makes two serves.

Ingredients.

  • 4 slices of wood fired bread
  • 6 tomatoes chopped
  • 1 garlic clove sliced
  • 1 tablespoon finely chopped spanish onion (optional)
  • 10 basil leave roughly chopped
  • olive oil
  • salt

Method.

In a bowl mix the tomato and a good pinch of salt. Put the tomatoes in a strainer. This will remove a lot of the liquid and stop the bread going soggy.

Put the bread on to grill or dry fry in a pan.

When the bread is almost ready return the drained tomatoes to the (cleaned) bowl. Add the onion and basil.

Rub the garlic slices over the toasted bread. Pile the tomatoes on top and drizzle with olive oil.
