Broccolini pasta is a remake of the classic garlic chilli pasta and makes a great light summer pasta.
Makes two serves.
Put the pasta on to cook.
Finely chop the garlic and chilli and cut the broccolini into long stems.
When the pasta is almost cooked add the garlic and chilli with some olive oil to a frypan on a medium heat. After half a minute add the broccolini and coat well with the garlic and chilli. Deglaze with the white wine, cover with a lid and cook for about 2 minutes until the brocollini is bright green. Remove from the heat.
Drain the pasta and add to the broccolini. Serve.
When the pasta is almost cooked, add the brocollini to the pasta pot and leave to cook for a minute. drain the pasta and brocollini. add the brocollini and pasta to the frypan and mix well. turn off the heat, toss through the avocado and spinach leaves. serve.
