Banana Bread.

Banana bread is great in so many ways; easy to make, gets rid of over ripe banana’s, freezes really well and is very tasty heated up on the sandwich maker at work when everyone else is eating pastries.

Makes 1 large loaf or 2 small loaves.

Ingredients.

  • 1/4 cup soy milk
  • 1 teaspoon vinegar (apple cider or white vinegar)
  • 2 cups self-raising flour (or plain flour + 4 teaspoons baking powder)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/2 cup sugar (I use half brown, half white)
  • 1/4 cup dairy free margarine
  • 2/3 cup apple sauce
  • 3 very ripe banana's

Method.

Heat the oven to 180C / 350F.

Mix together the soy milk and vinegar. Set aside.

Sift together the flour and spices in a bowl.

In a food processor or blender cream the sugar and margarine together. Add the banana’s and apple sauce and blend until smooth. Add to the dry ingredients with the soy milk and mix until there are no lumps.

Pour into a greased loaf tin and bake for 90 minutes; a skewer will come out clean when it is done. If you are making it as two loaves it will only take 45 minutes to bake.
